Mussels in creamy white wine sauce

Description

These tasty mussels will make you feel like you're enjoying a grown-up dinner at a fancy French restaurant. You can whip-up this keto-friendly, quick and easy one-pot meal in under 20 minutes.


Ingredients

Scale

4 pounds fresh mussels in shells (about 2 bags), scrubbed

2 tablespoons unsalted butter

6 cloves garlic, sliced

1 glass (5 fluid ounces) white wine, I used Pinot Grigio, Sauvignon Blanc and Chardonnay are also great choices

1/4 cup heavy cream

1/4 teaspoon salt

a pinch of turmeric (optional - add turmeric if you want the sauce to become golden)

a handful of fresh chives, chopped


Instructions

  1. Melt butter in a large pot over high heat. Add garlic. Cook 1 minute.
  2. Add wine. Bring to a boil. Boil 1 minute. Add cream, salt, turmeric if you want the sauce to become golden, and 1/2 the chives. Gently add mussels. Toss gently to coat mussels. Cover the pot and cook over high heat 4-5 minutes, watching the pot, until most of the mussels have opened. Throw out any mussels that haven’t opened.
  3. With a slotted spoon, spoon mussels into a large serving bowl. Pour sauce over mussels. Sprinkle with remaining chives.

Notes

After cooking, throw out any mussels that haven't opened.
