Description
Caprese salad is a simple Italian salad made of fresh mozzarella, tomatoes, and basil. This salad can also be tossed with pasta to make Caprese pasta. Skip the pasta and try this Spaghetti Squash Caprese for a hot and cheesy vegetarian casserole that's low on carbs.

- 2 halves cooked spaghetti squash, shredded in skins
- 1 cup cherry tomatoes, halved
- 8 ounces fresh mozzarella cheese in bite-sized pieces
- 2 tablespoons olive oil
- 1 tablespoon balsamic vinegar
- a pinch of salt
- freshly cracked black pepper to taste
- fresh basil leaves to taste
Instructions
- Start with cooked spaghetti squash halves.Â
- Scrape the cooked flesh with a fork to separate the flesh into strands of "noodles". Keep the flesh in the squash skin to use as a "boat" for baking.
- Combine Caprese ingredients together in a mixing bowl.
- Top the squash with Caprese salad.
- Place filled squash skins on a baking sheet and bake in a 400°F oven for +/- 20 minutes until cheese begins to melt.
