Step 2: Scoop out the seeds and set aside for toasting.

Step 3: Arrange cut-side down and roast for 30 minutes at 375°F or until fork tender.

Step 4: Let squash cool to the touch then use a fork to mash like potatoes.

For roasted squash seeds separate seeds from pulp onto a baking sheet.

Toss with salt and oil. Bake 20 minutes at 375°F.
