Make ahead
You can make the melon balls ahead of time and keep them in the fridge for up to 3 days. Or you can freeze them. Frozen melon balls double as ice balls.
To freeze melon balls
Arrange them in a single layer on parchment paper on a tray or baking sheet in the freezer for 1-2 hours. When they are frozen transfer them to a freezer bag, squeeze out the air and seal. They will keep frozen for 12 months.
