Shrimp scampi is an expensive restaurant item that is easy to make at home for less money and more shrimp. Serve this over zucchini noodles to sop up the rich garlicky sauce while keeping it keto and low-carb.

What is scampi sauce made of?

Shrimp scampi is simply a dish made of shrimp cooked in garlic, lemon and butter sauce.

Ingredients you'll need

shrimp

Use peeled and deveined shrimp for this recipe. Fresh shrimp is great, but you can use previously frozen shrimp. If using frozen shrimp, thaw and drain according to package directions before using.

butter

You will need a generous amount of butter. This recipe calls for a stick of butter.

garlic

Lot's of garlic. If you don't have fresh garlic, you can use garlic powder in a pinch, but fresh garlic slivers simmered in butter are delicious.

lemon (juice and zest)

Lemon lightens up and balances the richness of garlic butter.

white wine or broth

This recipe calls for white wine, but if you don't keep alcohol in your kitchen pantry (I don't). You can use fish broth or clam juice or even shrimp broth made by boiling water with shrimp shells. You can even just add a small amount of water.

parsley

The nutrition analysis below includes parsley which not only adds bright flavor, but a good dose of vitamins to this meal.

salt and pepper for seasoning

A large skillet about 10-12 inches wide.

Serving Suggestions

Serve over zucchini "noodles" as a satisfying low-carb and keto-friendly option. Blanch zucchini noodles in lightly salted boiling water for 2-3 minutes. Drain and serve hot. Or try it with a side of lightly cooked vegetables or leafy greens such as spinach or broccoli rabe. Asparagus and green beans also go well with this dish.

What can I use as a substitute for white wine in shrimp scampi?

You can substitute white wine with shrimp broth, fish broth or clam juice. If you use clam juice from a can, then omit the salt in the recipe.

Description

Simple, yet luxurious shrimp in garlicky butter sauce with a splash of white wine and lemon is sure to impress. This quick and easy seafood classic takes only minutes to whip up.


Ingredients

Units Scale
  • 1 stick of butter
  • 12 cloves garlic, sliced
  • 1 pound large shrimp, shelled and deveined
  • 1 teaspoon lemon zest
  • ¼ cup dry white wine
  • 1 tablespoon lemon juice
  • ½ cup parsley, chopped
  • salt and pepper to taste

Instructions

  1. Melt butter in a large skillet over medium-high heat.
  2. Sauté garlic until garlic begins to turn golden. Remove garlic with a slotted spoon and set aside.
  3. Add shrimp and  lemon zest. Stir until shrimp turn pink and are no longer transparent. Remove shrimp with a slotted spoon and set aside in a covered bowl to keep warm.
  4. Add wine (or broth) to pan and turn up heat to simmer for 3 minutes or so to let the alcohol evaporate. Season sauce with salt and pepper to taste.
  5. Return shrimp and garlic to skillet and toss to warm through.
  6. Remove skillet from heat and stir in parsley and lemon juice. 
  7. Pour over zucchini noodles for a low carb option.
