How to cook Shishito Peppers

What do you eat shishito peppers with? They are great simply seasoned with sea salt and a hit of citrus juice. The type of citrus you use is up to you. Yuzu is great as it has a peppery profile, but lemon or lime is also fantastic. You can fancy them up by using smoked sea salt and your favorite dipping sauce or a sprinkle of Japanese 7 spice blend called Shichimi Togarashi. They are also delicious with a splash of soy sauce. A creamy mayonnaise, such as Kewpie mayo, is also delicious with these peppers.
Shishitos are a great vehicle to try out all kinds of gourmet salts – smoked, infused, etc. You can sub green peppers in a recipe with shishito in a pinch. Every so often, you will encounter a spicy shishito, although most are sweet. Try skewering and grilling or glazing with mirin, apple cider vin, and soy. For something new, try tempura frying the peppers using a light flour like rice, cake or GF flour with seltzer to create the batter. Use a cast iron with coconut, avocado or other high heat oil and fry in small batches to keep the oil temp stable. This simple preparation lets the pepper’s flavor come through. Mix vinegar, soy, scallion for dipping sauce.

Ingredients
- 1 quart shishito peppers (40-45), rinsed and dried.
- 1 teaspoon olive oil
- 1 lemon wedge
- ½ teaspoon sea salt
Instructions
- Rinse and dry the peppers.
- Heat skillet over high heat until smoking hot.
- Add peppers.
- Dry roast the peppers until charred on one side. Then flip over and cook until charred on other side.
- Turn off heat.
- Drizzle in olive oil. Toss to coat.
- Sprinkle in sea salt. Toss to coat.
- Plate peppers.
- Garnish with lemon wedges. Sprinkle with a pinch of salt.
