Bacon wrapped asparagus is a keto-friendly, low-carb appetizer. This is a great recipe to get your kids to eat their vegetables and is a perfect appetizer to share with friends and family. You can also enjoy it as a side dish.

Asparagus is full of vitamin C, vitamin A and vitamin K as well as minerals essential to support good health. Researchers have found that regular consumption of asparagus can keep blood sugar levels in check and increase insulin production in the body.

Because this recipe uses more asparagus than bacon, it only contains 1g of saturated fat per serving. See the nutrition facts label in the recipe card below.

Ingredients

  • asparagus spears
    Use fresh asparagus. You'll need 28-32 asparagus spears, rinsed, dried and trimmed.
  • bacon 🥓
    Use bacon with no sugar added, such as brown sugar, to avoid a rise in blood glucose. Thick cut or thinly sliced bacon will both work.
  • olive oil
    A splash of olive oil will help the asparagus spears crisp.
  • salt 🧂
    Just a pinch of salt on the asparagus will help them to crisp and brings out their flavor.

Equipment

  • air fryer
    An air fryer makes cooking easier. If you don't have an air fryer, you can place these in the oven under the broiler or try grilling bacon wrapped asparagus. There are many air fryers on the market. You may need to adjust cook times depending on your model and air fryer capacity.

Instructions

Here's how to make bacon wrapped asparagus.

Step 1: Wash and pat each asparagus spear dry. Trim to fit the air fryer basket.

Gently bend the bottom section of each asparagus stalk, the end will naturally break off. 

Step 2: Coat asparagus spears in olive oil and salt.

Step 3: Wrap the asparagus with bacon slices cut in half.

Step 4: Air fry at 375°F for 10 minutes. Remove with tongs.

Substitutions

  • If you don't eat pork, you can use turkey bacon.
  • Melted butter instead of olive oil.

Serving suggestions

Serve bacon wrapped asparagus with a squeeze of fresh lemon juice.

Storage

Store leftovers in an airtight container in the fridge for up to 7 days. Reheat by air frying for 1-2 minutes.

If making for meal prep, these can be assembled ahead of time, then air fried just before serving.

Description

Here's a delicious bacon-wrapped asparagus recipe that will make your mouth water. An air fryer makes perfectly crispy bacon in minutes.


Ingredients

Scale
  • 28 asparagus spears
  • 1 tablespoon olive oil
  • a pinch of salt
  • 2 slices of bacon (no sugar added)

Instructions

  1. Rinse asparagus.
  2. Trim off bottom ends to fit air fryer basket.
  3. Pat each asparagus dry with a clean towel.
  4. Season asparagus in a shallow bowl with oil, salt and your favorite seasonings. Toss to coat.
  5. Cut bacon strips in half.
  6. Wrap a half strip of bacon around the middle of 7 asparagus stalks, making a bundle. Tuck the loose end of the bacon strip under the bundle.
  7. Arrange asparagus bundles in the air fryer basket, leaving room in between each bundle for air to circulate and crisp the asparagus bacon bundles.
  8. Air fry at 375°F for 10 -15 minutes depending on how crispy you like your bacon.
  9. Season bacon with freshly cracked black pepper.
