Apple mug cake

Warm, buttery mug cake made with freshly chopped apple, spiced with cinnamon and vanilla is perfect for apple season. It's a cozy, single-serving sweet treat in a mug that's ready in minutes. This sugar-free, no egg cake in a mug cooks in just 2 minutes in the microwave!

There are few desserts easier to make than a mug cake.

This one's got a bit of that apple cider donut vibe. You can enjoy it as is or top it with cold vanilla cream for a low-carb hint of melted ice cream.

I love snacking on raw sliced apples with cheese or nut butter. I also enjoy apple pie (in moderation). But I wanted to make a warm apple recipe that was quick and easy with little fuss and low cleanup, so I created this apple mug cake recipe to fit my carb budget.

Ingredients in Apple Mug Cake

Here’s what goes into making apple mug cake:

  • fresh apple
    Apples are high in carbs, but also high in nutrients, fiber and water. In moderation, you can enjoy fresh apples on a low-carb diet. For this recipe, use any type of fresh apple available.
  • no sugar
    There are no added sweeteners in this recipe. This treat is naturally sweetened with apple.
  • butter
  • flour
    A scant amount of flour is used.
  • cinnamon
    Feel free to add any spices you like.
  • baking powder
  • heavy cream
  • vanilla extract
  • optional, but a squirt of lemon juice is very nice in this dessert, if you have it

How to make Apple Mug Cake

Just chop up a fresh apple, add it to a mug, mix in cinnamon spice and everything nice, then microwave for 2 minutes. You've got a hot and cozy dessert to warm your hands on a cool, crisp fall day.

Equipment

You'll need 1 microwave safe mug and a spoon, a cutting board and knife to chop the apple with.

How to make ahead

Add all the ingredients to a small glass container, put a lid on it, and take it to the office with you. All you need to do is remove the lid and microwave it for a couple of minutes.

Description

Ingredients

Scale
  • 1 small apple (2-¾" diameter), peeled, cored and sliced
  • 1 pat butter
  • 1 tablespoon flour
  • ½ teaspoon baking powder
  • a dash of cinnamon
  • 1 tablespoon heavy cream
  • 1 teaspoon vanilla extract

Instructions

Melt butter in mug 30-45 sec. Swirl to coat.

Add wet ingredients and combine throughly.

Combine dry ingredients in the mug.

Chop apple. Mix w cake batter.

Top w walnuts.

Microwave on high heat for 2 minutes. Let cool 1 minute. Serve hot in the mug with a spoon.

    Absolutely lovely. I use my lactofree milk instead of cream and it works perfectly. I also use "Mixed Spice" which is a UK blend of mostly cinnamon and nutmeg with some other stuff, basically it's apple pie spice. Very easy, flexible, tasty treat.
