Ingredients
- 1 stick of butter
- 12 cloves garlic, sliced
- 1 pound large shrimp, shelled and deveined
- 1 teaspoon lemon zest
- ¼ cup dry white wine
- 1 tablespoon lemon juice
- ½ cup parsley, chopped
- salt and pepper to taste
Instructions
- Melt butter in a large skillet over medium-high heat.
- Sauté garlic until garlic begins to turn golden. Remove garlic with a slotted spoon and set aside.
- Add shrimp and lemon zest. Stir until shrimp turn pink and are no longer transparent. Remove shrimp with a slotted spoon and set aside in a covered bowl to keep warm.
- Add wine (or broth) to pan and turn up heat to simmer for 3 minutes or so to let the alcohol evaporate. Season sauce with salt and pepper to taste.
- Return shrimp and garlic to skillet and toss to warm through.
- Remove skillet from heat and stir in parsley and lemon juice.
- Pour over zucchini noodles for a low carb option.
