Caprese salad is a simple Italian salad made of fresh mozzarella, tomatoes, and basil. This salad can also be tossed with pasta to make Caprese pasta. Skip the pasta and try this Spaghetti Squash Caprese for a hot and cheesy vegetarian casserole that's low on carbs.

I love Caprese salad! Whenever I make this recipe it is hard to resist eating the salad alone! But I do love baking Caprese salad in these cute spaghetti squash boats! All the ingredients come together into a warm and cozy "pasta" casserole. The cheese gets nice and gooey and the roasted tomatoes burst with their juices. This quick and easy spaghetti squash recipe is keto, low-carb, vegetarian-friendly, gluten-free and delicious!


Recipe Ingredients

  • spaghetti squash
    You’ll need 1 whole, cooked spaghetti squash. Since spaghetti squashes vary in weight and size, yours may yield more than 2 cups of cooked spaghetti squash “noodles”. Visit this post on How To Cook Spaghetti Squash for tips.
  • tomatoes
    Use any type of fresh tomatoes that are available. Cherry tomatoes are very nice.
  • fresh mozzarella cheese
    Either use mozzarella balls or sliced fresh mozzarella.
  • basil
    Fresh basil leaves are both beautiful and delicious as a garnish, but you may substitute with dried leaves if you are out of fresh basil.
  • olive oil
  • vinegar
    Use your choice of vinegar. Balsamic vinegar is nice.
  • salt
    Just a pinch of salt to balance out the acidity of the vinegar.
  • black pepper

How To Make Spaghetti Squash Caprese

Follow these simple steps to make Spaghetti Squash Caprese:
Start with cooked spaghetti squash: Check out these tips on how to cook spaghetti squash.

Separate the flesh of the cooked squash with a fork: Scrape the cooked flesh with a fork to separate the flesh into strands of "noodles". Keep the flesh in the squash skin to use as a "boat" for baking.

Prepare the Caprese salad: Combine caprese ingredients together in a mixing bowl.

Fill: Top the squash in the squash shell with Caprese salad.

Bake: Place on a baking sheet and bake in a 400°F oven for 20 minutes.

Ingredients

Units Scale
  • 2 halves cooked spaghetti squash, shredded in skins
  • 1 cup cherry tomatoes, halved
  • 8 ounces fresh mozzarella cheese in bite-sized pieces
  • 2 tablespoons olive oil
  • 1 tablespoon balsamic vinegar
  • a pinch of salt
  • freshly cracked black pepper to taste
  • fresh basil leaves to taste

Instructions

  1. Start with cooked spaghetti squash halves. 
  2. Scrape the cooked flesh with a fork to separate the flesh into strands of "noodles". Keep the flesh in the squash skin to use as a "boat" for baking.
  3. Combine Caprese ingredients together in a mixing bowl.
  4. Top the squash with Caprese salad.
  5. Place filled squash skins on a baking sheet and bake in a 400°F oven for +/- 20 minutes until cheese begins to melt.
