Insulin resistance diet

Broccoli is a keto-friendly, low-carb vegetable full of fiber, nutrients and anti-inflammatory antioxidants.

A human study demonstrated substantially decreased insulin resistance in people with type 2 diabetes who consumed broccoli every day for a month.

This recipe is keto, low-carb, vegan, vegetarian, gluten-free and dairy-free.

Ingredients

  • fresh broccoli florets
    Use fresh broccoli for best results. I used a fresh head of broccoli for this recipe. You may use pre cut broccoli florets, if you like.
  • extra virgin olive oil
    Olive oil has a slightly sharp flavor, highlighting the natural sweetness of broccoli.

Optional Ingredients

I kept it simple because I love the natural sweetness of broccoli. Occasionally I want to spice it up with seasoning variations. Here are some suggestions:

  • salt and freshly ground black pepper
  • minced garlic and butter
  • garlic powder
  • onion powder
  • lemon juice
  • lemon zest
  • freshly grated Parmesan cheese
  • red pepper flakes

Substitutions

  • Frozen broccoli florets can be cooked in an air fryer, if fresh broccoli isn't available.
  • Melted butter, avocado oil, or canola oil are fine substitutes for olive oil.
  • Olive oil cooking spray may also be used.

Cooking broccoli in the air fryer helps broccoli cook evenly in a matter of minutes. Cooking time can vary depending on the air fryer model.

How to make air fried broccoli

Step 1: Arrange broccoli in a single layer in the air fryer basket so that it cooks evenly. Drizzle with olive oil.

Step 2: For crisp, tender broccoli cook for 5 minutes at 400°F. Flip broccoli. Cook for 5 more minutes.

Serving suggestions

Serve immediately, while nice and hot as a healthy side dish for dinner tonight.

  • Sprinkle with Kosher salt while still hot
  • Toss with minced garlic and melted butter, then air fry just a couple of minutes more
  • Serve with a tasty dipping sauce such as blue cheese or ranch dressing

Storage

Leftover broccoli can be stored in an airtight container in the fridge for up to 5 days. Reheat by air frying for 1 minute.
