Keto ground beef stroganoff

Keto ground beef stroganoff is one of my favorite keto ground beef recipes. Fresh mushrooms and ground beef are simmered in a rich, savory sour cream sauce for comfort food your whole family will love!

Easy ground beef stroganoff is a hearty meal

Ground beef stroganoff (also called hamburger stroganoff) is a keto-friendly recipe so long as you don't serve it over high carb noodles. Instead, serve it with your favorite pasta substitute like low-carb pasta, spaghetti squash or cauliflower mashed potatoes.

Diabetic diet

This keto stroganoff is low-carb, keto and gluten-free. Keep it keto by serving over low carb substitutes for egg noodles.

This recipes uses fresh mushrooms and sour cream, instead of carby cream of mushroom soup. Mushrooms are safe to eat if you have diabetes, they are low carb and low glycemic, so they won’t spike your blood sugar levels.

We also use xanthan gum, instead of flour to thicken the sauce.

Main ingredients

  • ground beef
    Using ground beef makes this stroganoff recipe less expensive than classic beef stroganoff, which is often made with steak.
  • sliced mushrooms
    I used sliced cremini mushrooms for this recipe. Many supermarkets label them as "baby bella mushrooms".
  • sour cream

Substitutions

  • Ground turkey, instead of lean ground beef
  • a little Dijon mustard, instead of mustard powder
  • Chicken broth, beef bouillon or low sodium beef broth, instead of beef broth
  • Canned mushrooms, if you don't have fresh
  • Use any type of mushroom that you have available if you can't find baby bella mushrooms in the store. White button mushrooms are a great substitute.
  • Full fat Greek yogurt or condensed cream, instead of sour cream

Equipment

  • spatula, spoon or tongs

How to make keto ground beef stroganoff

To keep this recipe keto, don't add flour. Use xanthan gum at the end to thicken the sauce.

Step 1: In a large skillet, heat olive oil. Add ground beef and brown beef over medium high heat.

Cook ground meat until browned all over.

Step 2: Push beef to side of pan and melt butter. Add sliced mushrooms, onions, minced garlic, and Worcestershire sauce.

Sauté until onions are translucent.

Step 3: Season with salt and pepper, mustard powder, smoked paprika, and onion powder. Stir to combine the beef mixture.

These seasonings make a savory gravy.

Step 4: Add beef broth and  beef bouillon base to the meat mixture. Simmer for 5 minutes, stirring occasionally over medium heat.

Step 5: Turn off heat and stir in cream cheese until cheese completely melts and mixes into the sauce.

Step 6: Stir in sour cream and xanthan gum to thicken the sauce.

Garnish with freshly chopped parsley.

Serving suggestions

Served traditionally over cooked egg noodles, keep it low-carb by serving ground beef stroganoff over cooked zucchini ribbons or spaghetti squash noodles. There are also some decent keto noodles in stores.

Storage

Store leftovers in an airtight container for up to 5 days. Reheat over low heat.

Cooking tips

  • Brown the ground beef for maximum flavor
  • Add the xanthan gum at the very end and don't over do it. It thickens sauces without heat.
  • Add sour cream at the end, after turning off the heat, to keep the sauce from breaking.

Description

Keto ground beef stroganoff is one of my favorite keto ground beef recipes. Fresh mushrooms and ground beef are simmered in a rich, savory sour cream sauce for comfort food your whole family will love!


Ingredients

  • 1 tablespoon olive oil
  • 1 pound ground beef
  • 2 tablespoons salted butter
  • 2 cups sliced baby Bella mushrooms
  • ½ cup chopped yellow onion
  • 2 cloves garlic, minced
  • 1 tablespoon Worcestershire sauce
  • ½ teaspoon Kosher salt
  • ½ teaspoon ground black pepper
  • ½ teaspoon ground mustard powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon onion powder
  • 1 quart beef broth
  • 1 tablespoon beef bouillon base
  • 4 ounces cream cheese, chopped into cubes
  • 1 cup sour cream
  • ¼ teaspoon xanthan gum
  • 1 tablespoon fresh parsley, chopped

Instructions

  1. In a large skillet, heat olive oil and brown ground beef over medium high heat.
  2. Push beef to side of pan and melt butter. Add onions, mushrooms, garlic, and Worcestershire sauce. Sauté until onions are translucent.
  3. Season with salt, pepper, mustard powder, paprika, and onion powder. Stir to combine.
  4. Add beef broth and beef bouillon base. Simmer for 5 minutes, stirring frequently. 
  5. Turn off heat and stir in cream cheese until cheese completely melts and mixes into the sauce.
  6. Fold in sour cream and xanthan gum to thicken the sauce.
  7. Garnish with fresh parsley.

Notes

  • Serve over low-carb vegetables or noodles.
  • Brown the ground beef for maximum flavor.

    Your recipe made a very delicious stroganoff. Though I admit I did not use xanthan gum because I did not have it. So I used ordinary corn starch to thicken the sauce. It did the trick. Thank you.

    Flavor was very nice but I think the amount of beef broth is wrong. A quart was way too liquidated (even with noodles for my husband) I think it should be a pint

    I'll start with the good.
    The flavor was fantastic!
    The bad? A quart of beef broth turned my sauce into a watery soup.
    I had some extra mushrooms and I added those. I then added another 2 oz of cream cheese. The only substitution I made to the recipe was to use corn starch instead of the xanthum gum, and I took that up to 2.5 tsps. It was still on the thin side.
    I will make it again but I'll start with 1 cup of broth.

    Excellent!! My husband and I absolutely loved this recipe. I did use 1can of cream of mushroom soup and 8 ounces of white mushrooms, then I added a bag of cauliflower rice after nooking it in the microwave for 5 minutes. I use Aldi’s cauliflower rice and it was so awesome. Tomorrow we are going to toast keto bread with butter on it and top it off with the stroganoff! This was so delicious.

    This tasty recipe is as easy as boiling water, but with so much complexity and depth of flavor. My favorite ingredients - Beef and sour cream! That’s it. And water. Did I say water?
