Ground beef stroganoff (also called hamburger stroganoff) is a keto-friendly recipe so long as you don't serve it over high carb noodles. Instead, serve it with your favorite pasta substitute like low-carb pasta, spaghetti squash or cauliflower mashed potatoes.

This recipes uses fresh mushrooms and sour cream, instead of carby cream of mushroom soup. Mushrooms are safe to eat if you have diabetes, they are low carb and low glycemic, so they won’t spike your blood sugar levels.
We also use xanthan gum, instead of flour to thicken the sauce.

Substitutions
- Ground turkey, instead of lean ground beef
- a little Dijon mustard, instead of mustard powder
- Chicken broth, beef bouillon or low sodium beef broth, instead of beef broth
- Canned mushrooms, if you don't have fresh
- Use any type of mushroom that you have available if you can't find baby bella mushrooms in the store. White button mushrooms are a great substitute.
- Full fat Greek yogurt or condensed cream, instead of sour cream

How to make keto ground beef stroganoff
To keep this recipe keto, don't add flour. Use xanthan gum at the end to thicken the sauce.
Step 1: In a large skillet, heat olive oil. Add ground beef and brown beef over medium high heat.
Step 2: Push beef to side of pan and melt butter. Add sliced mushrooms, onions, minced garlic, and Worcestershire sauce.
Step 3: Season with salt and pepper, mustard powder, smoked paprika, and onion powder. Stir to combine the beef mixture.
Step 4: Add beef broth and beef bouillon base to the meat mixture. Simmer for 5 minutes, stirring occasionally over medium heat.
Step 5: Turn off heat and stir in cream cheese until cheese completely melts and mixes into the sauce.
Step 6: Stir in sour cream and xanthan gum to thicken the sauce.
Serving suggestions
Served traditionally over cooked egg noodles, keep it low-carb by serving ground beef stroganoff over cooked zucchini ribbons or spaghetti squash noodles. There are also some decent keto noodles in stores.
Storage
Store leftovers in an airtight container for up to 5 days. Reheat over low heat.

- 2 tablespoons salted butter
- 2 cups sliced baby Bella mushrooms
- ½ cup chopped yellow onion
- 2 cloves garlic, minced
- 1 tablespoon Worcestershire sauce
- ½ teaspoon Kosher salt
- ½ teaspoon ground black pepper
- ½ teaspoon ground mustard powder
- 1 teaspoon smoked paprika
- 1 teaspoon onion powder
- 1 quart beef broth
- 1 tablespoon beef bouillon base
- 4 ounces cream cheese, chopped into cubes
- 1 cup sour cream
- ¼ teaspoon xanthan gum
- 1 tablespoon fresh parsley, chopped
Instructions
- In a large skillet, heat olive oil and brown ground beef over medium high heat.

Flavor was very nice but I think the amount of beef broth is wrong. A quart was way too liquidated (even with noodles for my husband) I think it should be a pint

The flavor was fantastic!
The bad? A quart of beef broth turned my sauce into a watery soup.
I had some extra mushrooms and I added those. I then added another 2 oz of cream cheese. The only substitution I made to the recipe was to use corn starch instead of the xanthum gum, and I took that up to 2.5 tsps. It was still on the thin side.
I will make it again but I'll start with 1 cup of broth.

Excellent!! My husband and I absolutely loved this recipe. I did use 1can of cream of mushroom soup and 8 ounces of white mushrooms, then I added a bag of cauliflower rice after nooking it in the microwave for 5 minutes. I use Aldi’s cauliflower rice and it was so awesome. Tomorrow we are going to toast keto bread with butter on it and top it off with the stroganoff! This was so delicious.
