Sunny side up eggs vs over easy

The difference is in the cooking techniques. Sunny side up eggs have yolks facing up. To cook them through, you need a lid. Without one, the side touching the pan can overcook, while the side facing up stays raw.

To avoid raw whites, try eggs cooked over easy. This technique gently flips the eggs to cook both sides evenly. The whites finish cooking, while the yolk remains warm and runny.

Soft, cooked whites and runny yolks.

Cooked whites and jammy, soft yolks.

Eggs over hard

Fully cooked eggs with firm, hard yolks and crispy whites. Also called "eggs over well" as in "well done".

  • Salted or unsalted butter, your choice 🧈

Substitutions

  • Use olive oil, avocado oil, nonstick cooking spray or bacon grease as a fat

Equipment

It's important to use the right pan.

How to cook eggs over easy

Step 1: Heat a non stick pan over medium low heat. Add butter.

Use a non stick skillet for best results.

Step 2: Swirl to coat the pan.

Coat pan in fat enough for the eggs to float.

Step 3: Crack eggs into pan.

Step 4: When whites turn opaque, carefully flip. Cook until the whites are no longer raw.

Serving suggestions

Gently slide eggs onto a plate and season with freshly ground black pepper. Enjoy as is or serve with air fryer bacon and low carb buttered toast.
