If you love fried eggs and want them fast, make over medium eggs. Perfect over medium eggs have soft yolks and crispy edges.

Eggs over easy

Over easy eggs are fried eggs that are flipped over once, and cooked just until the whites have set. They have runny yolks.

Eggs over medium

These are fried eggs that are flipped over once, and cooked until the yolks become slightly firm. They sometimes have slightly runny yolks.

Eggs over hard

Over hard fried eggs are flipped over and fully cooked on both sides. The yolks are firm and hard. Also called "eggs over well" as in "well done".

Ingredients

You don't need much more than eggs and butter.

Substitutions

  • Instead of butter, use olive oil, avocado oil, nonstick cooking spray or bacon grease

Equipment

It's important to use the right pan.

  • non stick skillet
    A well seasoned cast iron pan or well buttered stainless steel pan will also work.

How to cook over medium eggs

Step 1: Heat a non stick pan. Add butter. Melt butter over medium heat.

Step 2: Swirl melted butter to coat the pan.

Step 3: Crack eggs into pan.

Don't flip until the whites are solid.

Step 4: Cook eggs.

Step 5: Use a spatula to separate the eggs.

Step 8: Eggs are completely cooked when whites are firm and opaque.

Serving suggestions

For a delicious breakfast sprinkle salt and freshly cracked black pepper over eggs. Eat eggs as is or serve with air fryer bacon for breakfast! These are perfect eggs for avocado toast! The yolks are slightly firm, but not runny.

  4. Cook until whites turn opaque.
  5. Flip over.
  6. Cook until yolks are slightly firm to touch, about 2 minutes on each side.
